I have seen this cauliflower pizza recipe on pinterest and have been wanting to try it FOREVER!
So, I was craving pizza and decided to try it and I am more than pleasantly surprised.
If you are craving pizza and want a healthier option you have to try it!
Alright so you are going to need:
1 Head of Cauliflower
Any toppings of your choice
First chop up your cauliflower in smaller pieces so you can blend it. You want to reduce the cauliflower to a “rice” like consistency.
If you have a food processor you can just throw it in that. I don’t have one so I used my Magic Bullet and processed it in smaller pieces.
Then preheat your oven to 450 degrees.
Once you get it down to a “rice-like” consistency, you mix two cups of cauliflower, 2 eggs, 2 cups of Mozzarella and the spices to a bowl and mix it all up together.
Once it is mixed up, spray down your pizza pan and pour your “dough” onto the pan and spread it out into a circle or rectangle, which ever you prefer.
*Side note: Makes sure the middle of the pie is thinner and thicker towards the outside to make sure it cooks all the way through*
Brush olive oil over the dough and put it in the over to cook for 15 minutes.
Pull the pizza out of the oven and make sure it is cooked through all the way.
Then add your sauce, cheese and toppings!
Put back in the oven on Broil for 3 minutes or until the cheese is melted.
